Ingredients
8 slices fruit bread
500g strawberries

2 tbs coconut sugar
1/4 tsp vanilla bean powder *optional
1 cup coconut yoghurt
1 handful fresh mint leaves
3 tbs maple syrup
Method
- Rinse and pat dry strawberries, then hull and slice in half. Set in a bowl and top with coconut sugar and optional vanilla bean powder. Stir to combine, then allow to sit for 30-60 mins or until natural juices are released.
How to prepare berries

Once the strawberries are ready, toast the fruit bread.

Top the toast with coconut yoghurt, macerated berries, mint leaves and a drizzle of maple syrup. Enjoy immediately.

NOTES
The macerated strawberries will keep in the fridge for 12-24 hours, so it is best to make and enjoy this recipe on the same day.
